Greek Pita Bread Recipe

Ingredients
  • 1 tbsp sugar .
  • 1 1/2 c warm water .
  • 4 c flour .
  • 1 1/4 tsps yeast .
  • 2 tsps salt .
  • 1 tbsp olive oil

Directions
  • Step #1 Combine the yeast & sugar in a small bowl.
  • Step #2 Add 1/2 c of the warm water & let it stand for 10 mins to proof & ferment.
  • Step #3 Dissolve the salt in the remaining warm water.
  • Step #4 Put the flour In a large-ish mixing bowl, making a well in the middle & put the dissolved yeast & salt water into it.
  • Step #5 With your hands, mix it into a dough.
  • Step #6 You may need a bit more or less water depending on your flour.
  • Step #7 Knead the dough in the bowl with your fists for 10-15 mins or until smooth.
  • Step #8 Pour the oil over the dough & knead it again until the oil is absorbed.
  • Step #9 Cover up the dough in the bowl with a towel & set in a draft free area to rise to double it's bulk (1-2 hrs), then punch it down & knead it again for a few mins.
  • Step #10 Preheat oven to 350 degrees.
  • Step #11 Cut pieces of dough, egg-size or larger, depending on the size of the pita desired.
  • Step #12 Shape them into balls with your hands & roll them out over a lightly floured board or pastry cloth to 1/4" thickness.
  • Step #13 Set 2 or 3 pitas on a lightly oiled cookie sheet & bake them on the lower rack 2-3 mins each side.
  • Step #14 Bake longer for pita pockets.
  • Step #15 Susie's note: Pitas should be white & soft.
  • Step #16 Wrap the baked pitas in a clean towel until they are cool, then store them in plastic bags to prevent them from drying out.
  • Step #17 When you are ready to use them, heat a bit of oil in a skillet & fry them a min or so on each side, or until golden brown.
  • Step #18 Use them as soon as possible, because they get hard when they dry out.
