Vegetarian Pho Bo (vietnamese Noodle Soup) Recipe

Ingredients
  • 2 large bay leaves .
  • salt .
  • 3 tbsps Braggs liquid aminos .
  • 1/2 c fresh basil leaves .
  • 8 c clear vegetable stock .
  • 1 lime, cut into wedges .
  • 2 cinnamon sticks (3 inches each) .
  • 3 scallions, thinly sliced .
  • 1 inch gingerroot .
  • 1 small onion, sliced .
  • 1/2 c fresh cilantro, coarsely sliced .
  • 1/2 c tender greens .
  • 8 oz seitan, drained .
  • 3 tbsps peanuts (optional) .
  • 2 star anise pods .
  • 1 lb rice noodles .
  • 1/2 c shredded napa cabbage .
  • 1/4 c bean sprouts .
  • fresh ground pepper .
  • broth (use 8 c) .
  • 3 fresh red chili peppers or green chili peppers .
  • 8 medium garlic cloves, peeled & sliced coarsely

Directions
  • Step #1 Tear greaens into bite-sized pieces.
  • Step #2 Use both green & white parts of the scallions.
  • Step #3 Peanuts should besliced roasted unsalted Seed the chili peppers & cut into rounds.
  • Step #4 Make the broth then when it has simmered for about 10 mins, soak the noodles.
  • Step #5 To Soak: Bring 4 qts water to boil.
  • Step #6 Remove from heat.
  • Step #7 Add the noodles & soak 15 mins.
  • Step #8 Stir every once in awhile until noodles are pliable & easily separated.
  • Step #9 Drain & divide into bowls.
  • Step #10 Simmer seitan in the broth until heated through.
  • Step #11 About 4 mins then remove with a slotted spoon & thin slice into six portions & add your noodles.
  • Step #12 Now Place the bean sprouts, cilantro, basil, cabbage, greens, scallions & peanuts on top of the noodles & seitan.
  • Step #13 Put broth into bowls.
  • Step #14 Serve the lime, chili rounds & salt & pepper on the side.
  • Step #15 Broth: Makes 8 c.
  • Step #16 Put the stock, braggs, garlic & onion in a stock pot & bring to a boil.
  • Step #17 Char the ginger on all sides & add to the stock.
  • Step #18 Now add the cinnamon, anise & bay to the broth.
  • Step #19 Reduce heat & let simmer for 20 to 25 mins partially covered.
  • Step #20 Remove solids with slotted spoon.
  • Step #21 Adjust seasonings if needed & return to pot until ready to use in recipe.
  • Step #22 Keep hot.
