Sausage, Ricotta And Mozarella Lasagne Recipe

Ingredients
  • 4 garlic cloves, sliced .
  • 12 no-boil lasagna noodles .
  • 1 large red bell pepper, sliced .
  • 1 large egg .
  • 2 c part-skim ricotta cheese .
  • 1 1/2 lbs Italian sausage, cooked (combo of sweet & hot is the best!) .
  • 1/2 c dry red wine .
  • 1 (28 oz) jar tomato sauce .
  • 12 oz part-skim mozzarella cheese .
  • 1/4 c parmesan cheese, freshly grated .
  • 1 large onion, sliced

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 In a heavy kettle cook onions & 3 cloves of garlic until softened.
  • Step #3 Add sausage & bell pepper & cook 2 mins, breaking up sausage.
  • Step #4 Add tomato sauce & red wine & remaining garlic.
  • Step #5 Simmer 10 mins.
  • Step #6 In a bowl lightly beat eggs.
  • Step #7 In another bowl stir this together ricotta, egg, salt & pepper.
  • Step #8 Grate mozzarella.
  • Step #9 Pour 1 c sauce into a baking dish, & cover with 3 lasagne sheets, 13 by 9 by 2-inches (sauce will not cover bottom completely), making sure they do not touch each other.
  • Step #10 Spread about 2 c sauce over pasta.
  • Step #11 Drop 1/3 of ricotta mixture by spoonfuls onto sauce & carefully spread with back of spoon.
  • Step #12 Sprinkle top 1/4 of mozzarella over ricotta mixture.
  • Step #13 Make 2 more layers in the same manner, beginning & ending with pasta.
  • Step #14 Spread remaining sauce evenly over top, making sure pasta is completely covered, & sprinkle with Parmesan & remaining mozzarella.
  • Step #15 Cover up dish tightly with foil wrap, tenting slightly to prevent foil wrap from touching top layer, & bake in middle of oven for 20 mins.
  • Step #16 Remove foil wrap & bake lasagne 10 mins more, or until top is bubbling & golden.
  • Step #17 Let lasagne stand 5 mins before serving.
