Cream Puff Gateau Recipe

Ingredients
  • 1 1/2 c heavy whipping cream .
  • 5 large eggs, at about room temp .
  • 1 c unsweetened flaked coconut .
  • 3 tbsps strawberry preserves or raspberry preserves .
  • 1/4 tsp salt .
  • 1 c all-purpose flour .
  • 1 tbsp sugar .
  • 1/2 c butter, cut into pieces, plus more for buttering pans

Directions
  • Step #1 Preheat oven to 400°F Butter 3 large baking sheets & set aside.
  • Step #2 In a medium pan over med-heat/flame, melt 1/2 c butter with 1 c water; bring mixture to a simmer.
  • Step #3 Reduce heat to low & as soon as possible add flour, sugar, & salt all at once.
  • Step #4 Stir vigorously with a wooden spoon until the mixture forms a ball that pulls away from sides of pan, about 1 min.
  • Step #5 Remove from heat.
  • Step #6 Add eggs one at a time, stirring vigorously to fully incorporate each egg before adding the next.
  • Step #7 The mixture will appear to separate at first; keep stirring until dough comes together into a smooth paste.
  • Step #8 Divide dough evenly among the 3 prepared baking sheets.
  • Step #9 Using a spatula, spread dough into 8-inch circles.
  • Step #10 Bake pastry layers 20 mins, then reduce heat to 350F & bake this until browned, 10 to 15 mins.
  • Step #11 (Pastry may be baked in batches.
  • Step #12 ) Transfer layers to cooling racks & set aside.
  • Step #13 Meanwhile, spread coconut on a baking sheet & bake this at 350F until lightly toasted, about 10 mins.
  • Step #14 In a large bowl, beat cream to soft peaks.
  • Step #15 Add powdered sugar & beat to mix.
  • Step #16 Spread each pastry layer with 1 tbsps preserves, then top each with 1/3 of the whipped cream & 1/3 of the coconut.
  • Step #17 Stack the circles & slice with a serrated knife.
