Modern Roman Libum Recipe Or Roman Cheesecake Recipe

Ingredients
  • 1 c all-purpose flour .
  • 8 oz ricotta cheese .
  • bay leaves .
  • 1 egg, beaten .
  • 1/2 c clear honey

Directions
  • Step #1 Sift the flour into a bowl.
  • Step #2 Beat the cheese until it's soft & stir it into the flour along with the egg.
  • Step #3 Form a soft dough & divide into 4.
  • Step #4 Mold each one into a bun & place them on a greased baking tray with a fresh bay leaf underneath.
  • Step #5 Heat the oven to 425°F Cover up the cakes [see note on this] & bake for 35-40 mins until golden-brown.
  • Step #6 Warm the honey & place the warm cakes in it so that they absorb it.
  • Step #7 Allow to stand 30 mins before serving.
  • Step #8 NOTE: The Romans often covered their food while it was cooking with a domed earthenware cover called a testo.
  • Step #9 You can use an overturned, shallow clay pot, a metal bowl, or casserole dish as a brick.
