Ingredients
1 c all-purpose flour .
8 oz ricotta cheese .
bay leaves .
1 egg, beaten .
1/2 c clear honey
Directions
Step #1 Sift the flour into a bowl.
Step #2 Beat the cheese until it's soft & stir it into the flour along with the egg.
Step #3 Form a soft dough & divide into 4.
Step #4 Mold each one into a bun & place them on a greased baking tray with a fresh bay leaf underneath.
Step #5 Heat the oven to 425°F Cover up the cakes [see note on this] & bake for 35-40 mins until golden-brown.
Step #6 Warm the honey & place the warm cakes in it so that they absorb it.
Step #7 Allow to stand 30 mins before serving.
Step #8 NOTE: The Romans often covered their food while it was cooking with a domed earthenware cover called a testo.
Step #9 You can use an overturned, shallow clay pot, a metal bowl, or casserole dish as a brick.
