Pineapple-mint Coleslaw Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 1 (20 oz) can pineapple chunks, drain juice for other use, slice chunks into smaller chunks (or use pineapple tidbits) .
  • 3 tbsps ponzu sauce .
  • 2 tbsps vegetable oil .
  • black pepper .
  • 3 tbsps lime juice .
  • 8 stalks fresh mint, stalks removed & leaves sliced coarsely (reserve a few leaves for garnish) .
  • 1 small green cabbage, shredded .
  • 2 tbsps sugar .
  • 3 tsps rice wine vinegar or mirin

Directions
  • Step #1 Whisk together first 7 ingredients in a small bowl or 1-c measuring glass, & set aside for half an hr.
  • Step #2 While dressing is melding, mix remaining ingredients In a large-ish glass mixing bowl.
  • Step #3 When dressing is ready, pour dressing over salad ingredients & carefully mix.
  • Step #4 Add salt & pepper to taste, if necessary.
  • Step #5 Garnish with reserved mint leaves & serve.
  • Step #6 Coleslaw may be put in the fridged overnight (seal bowl with plastic wrap).
