Irish Chicken And Dumplings Recipe

Ingredients
  • 4 onions, coarsly sliced .
  • 1 1/2 tsps salt .
  • 1 tsp black pepper .
  • 4 (10 oz) cans condensed cream of chicken soup .
  • 6 c baking mix (aka.Bisquick) .
  • 1 tsp poultry seasoning (or 1/2 tsp rubbed sage & 1/2 tsp. dried thyme) .
  • 2 2/3 c milk .
  • 6 c water .
  • 1 (10 oz) frozen peas .
  • 8 skinless boneless chicken breast halves .
  • 2 c celery, sliced .
  • 5 carrots, sliced

Directions
  • Step #1 In a large heavy pot or dutch oven, celery, salt, water, onion, mix soup, poultry seasoning, chicken, & pepper.
  • Step #2 Cover up & cook on low heat about 1 1/2 hrs.
  • Step #3 Add potatoes & carrots, cover again & cook another 30 mins.
  • Step #4 Remove chicken from pot & shred meat.
  • Step #5 Return to pot.
  • Step #6 Add peas & cook 5 mins longer.
  • Step #7 To make dumplings; Mix baking mix & milk until a soft dough forms.
  • Step #8 Drop by large spoonfuls into boiling stew & let simmer,covered for 10 mins, then uncover & let simmer an extra 10 mins.
