Step #1 In a large heavy pot or dutch oven, celery, salt, water, onion, mix soup, poultry seasoning, chicken, & pepper.
Step #2 Cover up & cook on low heat about 1 1/2 hrs.
Step #3 Add potatoes & carrots, cover again & cook another 30 mins.
Step #4 Remove chicken from pot & shred meat.
Step #5 Return to pot.
Step #6 Add peas & cook 5 mins longer.
Step #7 To make dumplings; Mix baking mix & milk until a soft dough forms.
Step #8 Drop by large spoonfuls into boiling stew & let simmer,covered for 10 mins, then uncover & let simmer an extra 10 mins.
