Gingerbread Recipe

Ingredients
  • 1 tsp baking soda .
  • 1/2 tsp salt .
  • 2/3 c packed dark brown sugar .
  • 1 tsp ground ginger, peeled fresh ginger or 3 tbsps finely grated peeled fresh ginger .
  • 2 large eggs (I used brown) .
  • 2 1/4 c all-purpose flour .
  • 1 tbsp honey .
  • 1 tsp orange peel .
  • 2/3 c hot water .
  • 1/2 c unsalted butter, well softened .
  • 2/3 c molasses (not blackstrap) .
  • 1/4 tsp ground allspice .
  • 1 tsp sugar .
  • 2-3 tsps ground cinnamon

Directions
  • Step #1 Put oven rack in middle position & preheat your trusty oven to 350.
  • Step #2 Butter a nine inch square baking pan (I just used a loaf pan).
  • Step #3 Whisk together the first seven ingredients (if using ground ready to use ginger) In a large-ish bowl.
  • Step #4 With an electric mixer at medium speed, honey, molasses, beat together butter, brown sugar, & ginger (if using fresh) until mixd.
  • Step #5 Reduce speed to low & mix in flour mixture until smooth.
  • Step #6 Add hot water & mix until mixd (batter may appear curdled).
  • Step #7 Pour better into pan & bake this until a wooden pick or skewer inserted in center comes out clean.
  • Step #8 usually 35-45 mins.
