Ingredients
1 lb cavatappi pasta .
1/4 tsp cayenne pepper .
3 tbsps extra virgin olive oil, divided .
1 lb fresh mozzarella balls, cut into 1/2-inch cubes .
1/2 c flat leaf parsley, finely sliced .

2 1/2 c 2% low-fat milk .
3 garlic cloves, sliced .
1/2 lb capicola, sliced into thin ribbons .
3 tbsps all-purpose flour .
1/2 tsp nutmeg .
2 tbsps butter .
1 medium onion, sliced .
1 c parmigiano-reggiano cheese, grated & divided .
salt .
1 (10 oz) box frozen sliced spinach, defrosted & squeezed dry .
1 c Italian seasoned breadcrumbs
Directions
Step #1 Preheat broiler.
Step #2 Place a large pot of water over high heat & bring to a boil.
Step #3 Add the pasta, salt the water & cook to al dente.
Step #4 While the water is coming up to a boil for the pasta, heat a large skillet over med-heat/flame.
Step #5 Add 1 T olive oil & the butter.
Step #6 When butter melts into the oil, add onions & garlic & season this with salt & pepper.
Step #7 Cook, stirring frequently, for 2 mins then dust the onions with flour & continue to cook for 1 min.
Step #8 Slowly whisk in milk.
Step #9 Gently bring milk to a bubble, allow the milk to thicken a bit, then stir in the the capicola, spinach & 1/2 c grated Parmigiano.
Step #10 Spice up sauce with nutmeg & cayenne & remove this from the heat.
Step #11 Combine the cooked pasta & the cubed mozzarella with the sauce, stir this to coat completely by turning over & over.
Step #12 Transfer dressed pasta to a baking dish.
Step #13 To make the breadcrumb topping, mix the breadcrumbs, 2 T olive oil & the remaining 1/2 c Parmigiano.
Step #14 Sprinkle top the breadcrumb mixture over the top of the pasta to cover from edge to edge.
Step #15 Place the baking dish under the broiler & broil until golden brown & crispy.
Step #16 Garnish with sliced parsley.
