Banana Macadamia Bread Recipe

Ingredients
  • 1/3 c brown sugar .
  • 1/2 c oil (I used rice bran oil) .
  • 2 c plain flour .
  • 1/3 c caster sugar .
  • 3 large bananas, well mashed (very ripe ones are best) .
  • 2 large eggs, well beaten .
  • 1 tsp salt .
  • 1/2 c rice milk or soy milk (or your milk of choice) .
  • 1 tsp bicarbonate of soda .
  • 1/2 c macadamia nuts, very coarsely sliced

Directions
  • Step #1 Preheat oven to 180C & grease/line a 21 by 11 cm loaf tin.
  • Step #2 Mix bananas & eggs together in large bowl.
  • Step #3 In another bowl, sugars, sift together the flour, salt & bicarb soda.
  • Step #4 Tip flour mix into banana/egg mix, add macadamias, oil & milk & mix well.
  • Step #5 Spoon mixture into prepared tin & bake for 1 hr, or until golden brown on top & cooked inside (a skewer into the centre emerges clean).
  • Step #6 Remove from pan to wire rack to cool.
  • Step #7 Keeps well for several days in a sealed container.
