Buttermilk Peach Pancakes
Ingredients
1/2 tbsp tupelo honey .
1/2 lb butter, softened .
5 1/2 tbsps sugar .
1/4 tsp sea salt .
1 pinch sea salt .
2 3/4 c all-purpose flour .
SPICED PECANS .
3 c buttermilk .
2 tbsps butter, melted .
1 tsp salt .
1/2 tbsp butter .
1 tsp ground cinnamon .
1/2 tbsp baking soda .
1 large sweet potato, roasted & cooled .
2 tbsps honey .
3 large eggs .
1/2 tsp ground nutmeg .
1/2 c peaches, peeled & sliced .
1 c pecans, sliced .
1/4 tsp cayenne pepper .
1/4 c brown sugar .
1 tbsp baking powder .
PEACH BUTTER
Directions
Step #1 In a large bowl, mix the flour, baking soda, salt, sugar, & baking powder.
Step #2 In a separate bowl, & melted butter, whisk together the buttermilk, eggs, & then add this to the dry mixture.
Step #3 Peel & mash the sweet potato, place it in a bowl, & then add the honey, cinnamon, & nutmeg & mix it well.
Step #4 Add this mixture into the pancake batter.
Step #5 Let the batter stand for 1 hr (you can make it a day early).
Step #6 Heat a skillet over med-heat/flame.
Step #7 Add batter by the ladleful & cook the pancakes, in batches, until golden brown on each side.
Step #8 Serve as soon as possible with Spiced Pecans & Peach Butter.
Step #9 SPICED PECANS: Heat a medium skillet over med-heat/flame.
Step #10 Add all the ingredients & cook this until the pecans are lightly brown & caramelized, about 8 to 10 mins.
Step #11 Remove from heat, cool, & store this in an airtight container.
Step #12 Yield: about 1 c PEACH BUTTER: In a medium bowl, mix all ingredients & mix well until smooth.
Step #13 Cover up & put in the fridge until you are ready to serve.
Step #14 Yield: about 1 1/2 c.
