Hearty Turkey Chili Recipe

Ingredients
  • cheddar cheese, grated (optional) .
  • 3/4 (6 oz) can black olives .
  • 1 bunch fresh cilantro, sliced .
  • 1/2 (6 oz) can corn (optional) or 1/2 c frozen corn (optional) .
  • 1 red bell pepper .
  • 8 garlic cloves, sliced finely .
  • 2 (1 lb) packages ground turkey, browned .
  • 10 tomatoes, on the vine sliced roughly .
  • 3 (28 oz) cans crushed tomatoes .
  • 3-5 fresh jalapenos, seeded & sliced finely (keep seeds for extra hotness) .
  • 8 plum tomatoes, sliced roughly .
  • 3 (6 oz) cans kidney beans (use whatever beans you like) .
  • 1 yellow bell pepper .
  • 1/2 large onion, sliced (red or spanish) .
  • sour cream (optional) .
  • 1 tbsp chili powder (only to start, add more if needed) .
  • salt & pepper .
  • 1 orange bell pepper .
  • 1 tbsp cumin (only to start, add more if needed)

Directions
  • Step #1 In soup pot, heat olive oil over over low heat/flame.
  • Step #2 Add the onion, garlic, stirring all the time, & ½ of the cilantro & cook, for about 6 mins.
  • Step #3 In the meantime brown the turkey on the stove.
  • Step #4 Set aside.
  • Step #5 Add all the tomatoes, chili powder, & cumin.
  • Step #6 Bring to a boil.
  • Step #7 Add turkey, olives, peppers, & corn & bring back to a boil.
  • Step #8 Reduce heat to medium-low & add beans & remaining cilantro.
  • Step #9 Continuing stirring every once in awhile for 1 hr.
  • Step #10 Add extra spices, salt, & pepper to taste.
  • Step #11 * Top with some grated cheddar cheese & dollop of sour cream.
