Chicken With Creamy Apple-mushroom Sauce Recipe

Ingredients
  • 3 c fresh mushrooms, sliced .
  • 1/8 tsp salt .
  • 1 tbsp olive oil .
  • 3/4 c low-fat evaporated milk, divided .
  • 4 boneless skinless chicken breast halves .
  • 1 tbsp fresh parsley, minced .
  • 1 medium onion, sliced .
  • 1 1/2 c reduced-sodium chicken broth .
  • 2 c apples, peeled & sliced (McIntosh) .
  • 1 tsp dried tarragon .
  • 2 tbsps cornstarch .
  • 2 garlic cloves, minced .
  • 1/2 tsp pepper

Directions
  • Step #1 In a nonstick skillet, brown chicken in oil on both sides; remove & keep warm.
  • Step #2 In the same skillet, saute the mushrooms, onion & garlic until tender.
  • Step #3 Stir in the broth, tarragon, pepper & salt; bring to a boil.
  • Step #4 Add apples & reserved chicken.
  • Step #5 Reduce heat; cover & let simmer until chicken juices run clear.
  • Step #6 Remove chicken to a serving platter.
  • Step #7 Combine cornstarch & 1/4 c milk until smooth; stir in the remaining milk.
  • Step #8 Add to skillet; bring to a boil, cook & stir for 2 mins or until thickened.
  • Step #9 Serve over chicken; sprinkle with parsley.
