Ingredients
1 tsp vanilla .
2/3 c butter (room temperature) .
1/2 c cocoa .
2 1/2 c flour .
3/4 c hot water .
2 c packed brown sugar .
1/2 tsp salt .
2 tsps baking powder .
1 tsp baking soda .
1 egg .
1 c sour milk (or 1 Tbsp. vinegar in 1 c milk)
Directions
Step #1 In beater bowl, cream together butter, sugar & cocoa.
Step #2 Add egg & mix.
Step #3 Stir in sour milk & hot water to which 1 tsps baking soda has been added.
Step #4 In another bowl, mix together the baking powder, salt & flour.
Step #5 Add all at once to the creamed mixture.
Step #6 Add vanilla.
Step #7 Stir to incorporate all the flour mixture, then beat with mixer at high speed for 3 mins, scraping down sides of bowl with spatula.
Step #8 Spoon into paper-lined muffin tins filling 2/3 full.
Step #9 Bake at 350° for 18-20 mins.
Step #10 Frost with Fudge Icing.
Step #11 FUDGE ICING.
Step #12 1/2 c butter, 2 c icing sugar, 1 egg, 1/4 c cocoa, milk (see below).
Step #13 In bowl, cream together butter & cocoa.
Step #14 Add egg & blen well.
Step #15 Mix in icing sugar, then using beater on high, mix throughly.
Step #16 If too stiff, add 1 tsp milk at a time until desired consistency is reached.
Step #17 Fudge icing should be thick & moist rather than light & fluffy.
