Bob's Succulent Coleslaw Recipe

Ingredients
  • 1 c shredded carrots .
  • 1/4 c apple cider vinegar .
  • 1/2 tsp seasoning salt .
  • 2 tbsps sugar .
  • 1/8 c fresh parsley .
  • 1/2 head cabbage .
  • 1 c mayonnaise (I prefer Hellmans or Best Foods) .
  • 1/4 tsp ground pepper .
  • 1 green onion .
  • 1/4 tsp lemon-pepper seasoning

Directions
  • Step #1 Mix mayo, seasoning salt, pepper, sugar, & lemon-pepper in a bowl.
  • Step #2 Slowly add vinegar to mixture until mixd.
  • Step #3 Set aside in fridge for 30 mins.
  • Step #4 In a food processor/blender, in chunks, carrots, parsley, add half the cabbage, & onion.
  • Step #5 Pulse until nicely sliced, but not mushy.
  • Step #6 Thinly slice the other half of the cabbage.
  • Step #7 In a bowl, the sliced cabbage, mix the processed mixture, & the dressing, & toss.
  • Step #8 Let rest for at least an hr.
  • Step #9 Overnight is best.
