Crab Stuffed Catfish Recipe

Ingredients
  • 2 (6 oz) fillets catfish or whitefish fillets
  • dash cayenne pepper
  • 2 tbsps shredded Monterey Jack cheese
  • 1 1/2 tsps mayonnaise
  • 1/8 tsp paprika
  • 1/8 tsp pepper
  • 1 (6 oz) can crabmeat - drained, flaked & cartilage removed
  • 3 tbsps seasoned bread crumbs
  • 2 tbsps butter, melted
  • 1/8 tsp salt

Directions
  • Step #1 In a bowl, mix the first eight ingredients.
  • Step #2 Cut each fillet in half widthwise; place two halves in a greased 8-in.
  • Step #3 square baking dish.
  • Step #4 Press crab mixture onto fillets; top this with remaining halves.
  • Step #5 Sprinkle top with paprika.
  • Step #6 Bake, uncovered, at 425F degrees F for 22-26 mins or until fish flakes easily with a fork.
