Aloo Talkari Recipe

Ingredients
  • 4 potatoes, medium-size (cut into 1-inch pieces) .
  • 1 tbsp curry powder .
  • 3 tbsps ghee or vegetable oil .
  • 2 garlic cloves, minced .
  • 1 lb green beans, trimmed & cut into 1-inch lengths .
  • 1 small onion, sliced .
  • salt (to taste) .
  • 2 c chicken broth or vegetable broth or water

Directions
  • Step #1 Heat oil.
  • Step #2 Add the potatoes & cook for two mins browning them on all sides.
  • Step #3 Stir in the green beans & cook for 4 to 5 mins or until they begin to brown & blister.
  • Step #4 Add the onions & cook for 1 to 2 mins.
  • Step #5 Next add the garlic & stir well.
  • Step #6 Cook for about 30 seconds.
  • Step #7 Mix in the curry powder & cook a few mins unti the curry begins to release it's aromas.
  • Step #8 Add the broth & salt.
  • Step #9 Partly cover the pot & let simmer for 20 mins.
  • Step #10 Remove the lid & let simmer until the liquid is reduced by half.
