Turkey, Vegetable, And Bean Soup Recipe

Ingredients
  • 1/4 c fresh parsley, sliced .
  • 2 carrots, cut in large chunks .
  • 4 carrots, thinly sliced .
  • 1 large onion, quartered .
  • 1 bay leaf .
  • 3 sprigs parsley .
  • sliced cooked turkey (optional) .
  • 2 tbsps butter (can use olive oil) .
  • 1 (16 oz) can cannellini beans, drained & rinsed .
  • 1 turkey carcass .
  • 2 leeks, cleaned & thinly sliced .
  • 1/8 tsp dried thyme .
  • 10 c water .
  • 2 celery ribs, cut into chunks .
  • salt & pepper

Directions
  • Step #1 In large stock pot, onion, place carrot chunks, thyme, turkey carcass, parsley sprigs, celery, bay leaf, & water.
  • Step #2 Bring to a boil over high heat; reduce heat to medium-low & let simmer, partially covered for one hr.
  • Step #3 Remove turkey carcass from soup.
  • Step #4 When cool enough to handle, pick off turkey scraps & put in the fridge scraps.
  • Step #5 Strain broth into a large bowl, cover, & put in the fridge overnight.
  • Step #6 Remove broth from refrigerator & skim fat with a large spoon.
  • Step #7 Discard fat.
  • Step #8 In stock pot, melt butter (I use olive oil).
  • Step #9 Add carrot & leek slices; cook 5 mins.
  • Step #10 Stir in broth, turkey scraps plus extra sliced cooked turkey if desired, beans, & sliced parsley.
  • Step #11 Spice up with salt & pepper & cook this until heated through.
