No-cook Fresh Tomato Salsa (fat-free) Recipe

Ingredients
  • 1 small yellow bell pepper (seeded & sliced) (optional) .
  • 2-4 tsps fresh minced garlic (or use 1 tsp garlic powder, the fresh is better!) .
  • 1 pinch sugar (optional) .
  • 1/4 c sliced fresh cilantro .
  • 2 tbsps fresh lime juice (do not use bottled) .
  • Tabasco sauce (to taste, or use hot sauce to taste) .
  • 1 small green bell pepper, seeded & sliced .
  • VARIATIONS .
  • 1 jalapeno pepper, seeded & finely sliced .
  • 1 tbsp canned green chilies (drained & sliced or to taste) .
  • 6 green onions, sliced (or use 1 small white onion, sliced) .
  • 1/2 tsp black pepper (or to taste) .
  • 6 large plum tomatoes (seeded & sliced) .
  • drained black beans (to taste) .
  • drained corn niblets (to taste) .
  • 1/2-1 tsp white salt (or to taste)

Directions
  • Step #1 Place the sliced seeded tomatoes over a strainer & allow to drain for 1-2 hrs (or up to 24 hrs).
  • Step #2 Place the tomatoes, green bell pepper, onions, yellow bell pepper (if using) & cilantro in a processor; pulse until desired consistancy.
  • Step #3 Place into a glass bowl then add in all remaining ingredients; mix to mix & season this with salt & Tabasco to taste & add in a small amount of sugar if desired.
  • Step #4 If desired you may add in the variations of you choice.
  • Step #5 Refrigerate for a minumum of 8-24 hrs before serving.
