Chicken Parmesan Recipe

Ingredients
  • 1 c tomato sauce .
  • 1 1/2 c seasoned bread crumbs (depends on size of chicken breasts) .
  • 1 1/2 c flour (depends on size of chicken breasts) .
  • 2 eggs, beaten .
  • 1 c shredded mozzarella cheese .
  • 1/2 c shredded parmesan cheese (the very finely pre-shredded from the grocery store works best, divided) .
  • 4 boneless skinless chicken breasts .
  • 1 tsp basil

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 With a mallet lb chicken to 1/4 inch.
  • Step #3 Dredge in flour.
  • Step #4 Coat in egg mixture.
  • Step #5 Shake off excess & coat in bread crumbs mixed with 1/4 c of the parmesan cheese.
  • Step #6 Place in casserole sprayed or coated with oil.
  • Step #7 Bake 20 mins.
  • Step #8 Remove from oven.
  • Step #9 Spread some tomato sauce mixd with the basil on top of each chicken breast.
  • Step #10 Cover up with mozzarella cheese.
  • Step #11 Sprinkle top with with the remaining 1/4 c parmesan cheese.
  • Step #12 Use any remaining tomato sauce to cover the edges of the chicken as they cook faster.
  • Step #13 Place back in oven & cook for 15 to 20 mins.
  • Step #14 Serve with penne (or your favourite pasta) alfredo & a salad & garlic bread.
