Orecchiette With Lentils, Mint And Feta Recipe

Ingredients
  • 100 g feta, crumbled .
  • 1 1/2 tbsps balsamic vinegar .
  • 1/4 c olive oil .
  • 1/2 small Spanish onion, sliced top to bottom very thinly .
  • 400F g tinned brown lentils, drained & rinsed .
  • 100 g green beans, topped & cut into thirds .
  • 1/3 c fresh basil leaves, torn .
  • 150 g orecchiette (or any small pasta) .
  • 2 tbsps sliced fresh mint

Directions
  • Step #1 Bring a large saucepan of salted water to boil, add the beans & cook for 2-3 mins.
  • Step #2 Remove beans with slotted spoon & refresh with cold water.
  • Step #3 Cook the orecheiette till al dente, drain & set aside.
  • Step #4 To lentils & pasta, oil & herbs toss till mixd, balsamic, onion, season this with salt & pepper.
  • Step #5 Top with crumbled feta.
