Rock & Roll Bbq Salsa Ranchera Recipe

Ingredients
  • 6 medium tomatillos, husked & rinsed .
  • 1/2 tsp lime juice .
  • 1 c water .
  • 1/2 tsp black pepper .
  • 1 tbsp corn oil .
  • 1/2 tsp salt .
  • 1 (7 oz) can chipotle chiles in adobo .
  • 1 medium onion, White .
  • 1/2 c fresh cilantro, loosely packed .
  • 8 garlic cloves, sliced

Directions
  • Step #1 Add oil to a frying pan.
  • Step #2 Over medium heat brown your tomatillos.
  • Step #3 They may blacken a bit, no worries.
  • Step #4 Cook until soft & splitting.
  • Step #5 Remove the tomatillos & set aside.
  • Step #6 Add Onions to pan & cook them until soft & translucent.
  • Step #7 Add garlic & cook for another 2 mins.
  • Step #8 Add all ingredients to your mixer or food processor/blender & process untill smooth.
  • Step #9 Adjust water to control texture & your own personal taste.
  • Step #10 Chill for at least 2 hrs for flavors to mix.
  • Step #11 Serve with tortilla chips.
  • Step #12 Keeps for at least 3 days.
