Weight Watchers Chocolate Chip Cookies Recipe

Ingredients
  • 6 oz mini chocolate chips .
  • 1/3 c sugar .
  • 1 large egg .
  • 2 tbsps skim milk .
  • 1 tsp vanilla extract .
  • 1/2 c all-purpose flour, unbleached .
  • 1/2 c whole grain wheat flour .
  • 2/3 c light cream cheese, at about room temp .
  • 2 dashes cooking spray (2 sprays) .
  • 1/3 c unpacked brown sugar .
  • 1/4 tsp table salt .
  • 1/2 tsp baking soda

Directions
  • Step #1 Preheat oven to 375°F Coat 2 cookie sheets with cooking spray or cover with parchment paper.
  • Step #2 Beat cream cheese & both sugars In a large-ish bowl with an electric mixer until sugar is fully incorporated (should not have granules); add egg & vanilla & mix again.
  • Step #3 Combine both flours, salt & baking soda in a medium bowl.
  • Step #4 Add half the flour mixture to the cream cheese mixture; beat until well incorporated.
  • Step #5 Add milk & remaining flour mixture; beat until fully mixed & then fold in chips.
  • Step #6 Drop heaping tsps of dough onto prepared cookie sheet & press dough down with dampened fingers to form 1-inch cookies.
  • Step #7 Make sure to leave at least an inch between each cookie.
  • Step #8 Bake cookies until slightly golden on top, about 10 to 12 mins.
  • Step #9 Remove from oven & allow cookies to cool on cookie sheet for 1 to 2 mins; remove to a wire rack & cool completely.
  • Step #10 Yields 1 cookie per serving.
