Steak & Pasta Recipe

Ingredients
  • 1 1/2 c reduced-fat beef broth .
  • pasta, of your choice .
  • 2 tsps dried oregano .
  • 2 tbsps fresh parsley, sliced .
  • 2 tsps garlic, minced .
  • 1 (14 1/2 oz) can stewed tomatoes .
  • 2 tbsps all-purpose flour .
  • 1 lb boneless beef top round, trimmed of fat & cut in 1-inch cubes .
  • 8 oz mushrooms, sliced .
  • 1/2 c dry white wine .
  • 1 large onion, sliced .
  • 1/4 c tomato paste .
  • 1 large carrot, sliced

Directions
  • Step #1 Coat beef cubes with flour; set slightly apart in an ungreased shallow 3 to 3 1/2 quart baking dish.
  • Step #2 Bake at 500 degrees for 20 mins; remove this from oven & let cool in dish for 5 mins.
  • Step #3 Reduce oven temperature to 350 degrees.
  • Step #4 Add broth & wine to beef in baking dish; stir this to loosen browned bits.
  • Step #5 Stir in onion, garlic, carrot, tomato paste, mushrooms, parsley & oregano.
  • Step #6 Cut up tomatoes; add tomatoes & their liquid to dish.
  • Step #7 Cover up tightly & bake this until beef is very tender when pierced (about 2 1/2 hrs).
  • Step #8 When beef is almost done, cook pasta according to package directions.
  • Step #9 Drain well.
  • Step #10 Serve meat sauce over hot pasta.
