Carrot And Chickpea Soup Recipe

Ingredients
  • 3 large carrots, sliced .
  • 1/2 tbsp oil .
  • 4 c chicken broth .
  • 10 1/2 oz canned chick-peas .
  • 1/2 c orange juice .
  • 1 small leek, sliced .
  • plain yogurt (optional) .
  • 1/2 tsp mixed spice

Directions
  • Step #1 In a large pan, heat oil.
  • Step #2 Add carrots & stir until carrots are soft.
  • Step #3 Add all other ingredients apart from the yoghurt.
  • Step #4 Bring to the boil, cover & let simmer for approx 25 mins, stirring every so often.
  • Step #5 Remove pan from heat and, using a hand mixer, mix until the soup is nice & smooth.
  • Step #6 Return to the heat & heat through again.
  • Step #7 Optional: add a dollop of plain yoghurt to garnish, or even sprinle with chives.
