Step #1 In a large pan, heat oil.
Step #2 Add carrots & stir until carrots are soft.
Step #3 Add all other ingredients apart from the yoghurt.
Step #4 Bring to the boil, cover & let simmer for approx 25 mins, stirring every so often.
Step #5 Remove pan from heat and, using a hand mixer, mix until the soup is nice & smooth.
Step #6 Return to the heat & heat through again.
Step #7 Optional: add a dollop of plain yoghurt to garnish, or even sprinle with chives.
