Red Velvet Cake Recipe

Ingredients
  • Frosting .
  • 1/2 c vegetable shortening .
  • 1/8 tsp salt .
  • 1/3 c egg whites .
  • 1/4 tsp cream of tartar .
  • 1 1/2 c sugar .
  • Cake .
  • 1 tsp vanilla .
  • 1 c granulated sugar .
  • 1 c low-fat buttermilk .
  • 1/4 c egg whites, unbeaten .
  • 1 tsp baking soda .
  • 2 1/4 c whole wheat flour, sifted .
  • 1/3 c water .
  • 1 tsp kosher salt .
  • 3 tbsps cocoa powder .
  • 1 tbsp egg whites .
  • 2 (1 oz) bottles red food coloring .
  • 1 tsp vanilla .
  • 1 tsp white vinegar

Directions
  • Step #1 Preheat oven to 350°F Grease & lightly flour two 9" cake pans.
  • Step #2 Combine sifted flour & salt; set aside.
  • Step #3 Put cocoa in small bowl.
  • Step #4 Gradually add food coloring, stirring until smooth.
  • Step #5 Set aside.
  • Step #6 With electric mixer at medium speed, cream together shortening & sugar.
  • Step #7 Beating 5 mins until fluffy.
  • Step #8 (Do not shorten shortening/sugar creaming time!).
  • Step #9 Gradually add egg whites, beating for at least 30 seconds after each addition.
  • Step #10 With mixer at lowish speed, add flour mixture to sugar mixture alternately with buttermilk & vanilla, scraping sides of bowl as necessary.
  • Step #11 Add cocoa mixture.
  • Step #12 Blend well by hand.
  • Step #13 Do not beat.
  • Step #14 In small bowl, hand mix vinegar w/ baking soda.
  • Step #15 Stir briefly to mix, & then fold into cake batter.
  • Step #16 Do not beat.
  • Step #17 Pour batter into prepared cake pans.
  • Step #18 Bake 25-30 mins or until toothpick tests done.
  • Step #19 To make frosting: Combine sugar, water, cream of tartar & salt in saucepan.
  • Step #20 Bring to boil, stirring until sugar is dissolved & mixture is syrupy.
  • Step #21 While beating with electric mixer, slowly add syrup to unbeaten egg whites in mixing bowl.
  • Step #22 Do not stop beating until stiff peaks form (about 7 mins).
  • Step #23 Beat in vanilla.
  • Step #24 Allow cake layers to cool on rack 10 mins before turning out, & let cool completely before frosting.
