Vegetable-stuffed Pork Chops (crock Pot) Recipe

Ingredients
  • 1 (8 oz) can tomato sauce .
  • 1 (15 1/4 oz) can corn, drained .
  • 1/2 c converted long grain rice, uncooked .
  • 1 c dry breadcrumbs (Italian style) .
  • 1 small onion, sliced .
  • 1 green bell pepper, seeded & sliced .
  • 4 pork loin chops (thick & well trimmed)

Directions
  • Step #1 Cut pocket into each pork chop, cutting from edge nearest bone.
  • Step #2 Lightly season pockets with salt & pepper to taste.
  • Step #3 Combine corn, onion, bell pepper, bread crumbs & rice In a large-ish bowl.
  • Step #4 Stuff pork chops with vegetable-rice mixture.
  • Step #5 Secure along fat side with wooden toothpicks.
  • Step #6 Pour any remaining vegetable-rice mixture into slow cooker (aka crockpot).
  • Step #7 Add stuffed pork chops to slow cooker (aka crockpot).
  • Step #8 Moisten top of each pork chop with tomato sauce.
  • Step #9 Pour any remaining tomato sauce on top.
  • Step #10 Cover up & cook on low 8 to 10 hrs or until done.
