Ingredients
1/3 c fat-free buttermilk .
3/4 c fat-free buttermilk .
1/8 tsp baking soda .
Glaze .
2 tsps cornstarch .
1/2 c butter, softened .
3 c flour .
1 1/2 tsps pumpkin pie spice .
1 tbsp flour .
Cake .
4 eggs .
1/4 c sugar .
3/4 c packed dark brown sugar .
1/2 tsp salt .
1 tsp vanilla extract .
1 tsp baking powder .
1 (15 oz) can pumpkin .
3/4 c sugar .
1/2 tsp baking soda .
cooking spray .
2 tbsps butter
Directions
Step #1 Preheat oven to 350°.
Step #2 Lightly coat a 10-inch tube pan with cooking spray; dust with 1 tbsp flour.
Step #3 Spread pumpkin over 2 layers of paper towels; cover with 2 extra layers of paper towels.
Step #4 Let stand about 10 mins.
Step #5 Scrape drained pumpkin into a bowl.
Step #6 Place 3/4 c granulated sugar, brown sugar, & 1/2 c butter In a large-ish bowl; beat with a mixer at medium speed 3 mins or until well mixed.
Step #7 Add eggs, 1 at a time, beating well after each addition.
Step #8 Beat in pumpkin & vanilla.
Step #9 Combine 3 c of flour & next 4 ingredients (through salt) in a bowl, stirring well with a whisk.
Step #10 Add flour mixture & 3/4 c buttermilk alternately to sugar mixture, beginning & ending with flour mixture.
Step #11 Spoon batter into prepared pan.
Step #12 Bake for 55 mins or until a wooden pick inserted in center comes out clean.
Step #13 Cool in pan 10 mins on a wire rack.
Step #14 Remove from pan, & cool completely on wire rack.
Step #15 Combine 1/3 c buttermilk & remaining ingredients in a small saucepan over med-heat/flame; bring to a boil.
Step #16 Cook 1 min or until thick, stirring constantly; remove this from heat.
Step #17 Drizzle cake with glaze.
