Coconut Fried Shrimp Recipe

Ingredients
  • 2 tsps curry powder
  • Salt & pepper to taste
  • 2 c shredded coconut
  • 1 lb cleaned shrimp
  • oil for frying
  • 1/2 c flour
  • 2 eggs, beaten

Directions
  • Step #1 Preheat oil in skillet or wok on medium heat to 350 degrees.
  • Step #2 Mix flour, curry, coconut, salt & pepper.
  • Step #3 Dip shrimp in egg mixture then roll in flour mixture.
  • Step #4 Repeat.
  • Step #5 Cook about 3 mins on each side or until golden brown.
