Chicken Fingers With Honey Mustard Sauce Recipe

Ingredients
  • 1/3 c light mayonnaise .
  • 1 tbsp liquid honey .
  • 4 boneless skinless chicken breasts .
  • 1 c finely grated parmesan cheese .
  • pepper .
  • 1 tsp dried oregano .
  • 1 c panko or fresh breadcrumbs .
  • 1/4 c butter, melted .
  • 2 tbsps Dijon mustard .
  • 2 eggs .
  • 1/2 tsp paprika .
  • Honey-Mustard Sauce .
  • 1 tsp salt

Directions
  • Step #1 In small bowl, stir this together mayonnaise, Dijon & honey.
  • Step #2 Cover up & put in the fridge up to 3 days.
  • Step #3 Between sheets of plastic wrap, lb chicken with flat side of meat lber or with rolling pin until 1/2-inch thick.
  • Step #4 Cut lengthwise on diagonal into 4 x 1-1/2-inch strips.
  • Step #5 In bowl, whisk eggs.
  • Step #6 I used Egg Creations to replace the eggs.
  • Step #7 In shallow bowl, oregano, bread crumbs, mix cheese, salt, pepper & paprika.
  • Step #8 One at a time, dip chicken strips into eggs, letting excess drip back into bowl.
  • Step #9 Dredge in cheese mixture, coating generously & pressing to adhere.
  • Step #10 Arrange on greased baking sheets; drizzle with butter.
  • Step #11 Bake in 425°F oven until golden, crispy & no longer pink inside, about 15 mins.
  • Step #12 Serve with dipping sauce.
