Blueberry-pineapple Coffee Cake Recipe

Ingredients
  • 2/3 c oil .
  • 2 eggs .
  • 1 tsp cinnamon .
  • 1 c sugar .
  • 1 (8 oz) can crushed pineapple, well-drained .
  • 1/2 c pecans .
  • 2 c flour .
  • 1/2 tsp salt .
  • 1 tsp baking soda .
  • 1/4 tsp cinnamon .
  • 1 tsp baking powder .
  • 1/2 c packed brown sugar .
  • 1/4 tsp nutmeg .
  • 1 c fresh blueberries or frozen blueberries .
  • BLUEBERRY TOPPING .
  • 1/2 c brown sugar .
  • 1 c buttermilk

Directions
  • Step #1 Preheat oven to 350*.
  • Step #2 Grease 13x9x2-inch baking pan; set aside.
  • Step #3 In medium bowl stir this together flour, baking powder, 1 tsps cinnamon, baking soda, & 1/2 tsps salt.
  • Step #4 Set aside.
  • Step #5 In large bowl, 1/2 c brown sugar, stir this together sugar, oil & eggs.
  • Step #6 Add flour mixture & buttermilk alternately to sugar mixture, stirring after addition.
  • Step #7 Stir in pineapple.
  • Step #8 Spoon batter into prepared pan.
  • Step #9 For blueberry topping stir this together all ingredients for topping.
  • Step #10 Sprinkle top over batter.
  • Step #11 Bake for 35 to 40 mins or until wooden toothpick inserted near center comes out clean.
  • Step #12 Cool in pan on wire rack for 45 mins.
  • Step #13 Serve warm.
