Tomato Basil Pasta Nests Recipe

Ingredients
  • 1 c parmigiano-reggiano cheese or romano cheese, grated (optional, or serve on side) .
  • 20 fresh basil leaves, shredded .
  • 3 tbsps olive oil .
  • black pepper .
  • 5 garlic cloves, minced .
  • 3 tbsps pesto sauce, prepared & put in the fridged .
  • salt .
  • 1 lb angel hair pasta (I used spinach linguini, it was good!) .
  • 1 (28 oz) can crushed tomatoes .
  • 1 medium yellow onion, finely sliced

Directions
  • Step #1 Bring a large pot of water to a boil for the pasta.
  • Step #2 Salt the water & cook the pasta al dente, with a bite to it.
  • Step #3 While the water is heating, begin the sauce by heating a large, deep skillet over med-heat/flame.
  • Step #4 Add the olive oil, garlic, & onions.
  • Step #5 Saute for 8 to 10 mins; reduce the heat a bit if the onions begin to brown.
  • Step #6 You want them to become sweet & soft, but not to caramelize.
  • Step #7 Stir in the tomatoes & heat through.
  • Step #8 Spice up the sauce with salt & pepper.
  • Step #9 Wilt in the basil & turn off the heat.
  • Step #10 Stir in pesto sauce.
  • Step #11 Drain the pasta & add to the sauce.
  • Step #12 Toss in the pan to distribute.
  • Step #13 Sprinkle top in the cheese, tossing to mix (or leave out & serve at table).
  • Step #14 Grab a meat fork.
  • Step #15 Stick the fork into the pasta & bring up a heaping forkful.
  • Step #16 Turn & twist the pasta, using your palm to guide the pasta a bit, to form a nest.
  • Step #17 Serve! Makes 8 nests, 4 inches wide & 5-6 inches long.
  • Step #18 For Vegan omit the cheese or use a Vegan Cheese sub.
