Peanut Butter And Jam Cookies Recipe

Ingredients
  • 3/4 c caster sugar .
  • 1/2 c plain flour .
  • strawberry jam .
  • 1/4 c soft light brown sugar, packed .
  • 1 large egg .
  • 1/4 c creamy peanut butter .
  • FOR THE FROSTING .
  • 1 1/2 tbsps milk .
  • 2 tbsps icing sugar .
  • 1/2 tsp baking powder .
  • 1/4 c icing sugar, plus .
  • 3 drops vanilla essence .
  • 3/4 c creamy peanut butter .
  • 1/4 c unsalted butter, at about room temp

Directions
  • Step #1 Pre-heat the oven to 180*C/350*F.
  • Step #2 Sift together the flour & baking powder & set aside.
  • Step #3 Blend together the peanut butter & the butter with you electric hand mixer, until fluffy & well mixd.
  • Step #4 Add the caster sugar & the brown sugar & beat until smooth.
  • Step #5 Beat in the egg & vanilla.
  • Step #6 Stir in the flour mixture to mix.
  • Step #7 Shape TBS of the dough into balls & place 2 inches apart on an ungreased baking sheet.
  • Step #8 Press down a bit with your fingertips & then with your thumb, carefully dent the centre of each cookie.
  • Step #9 Spoon about ½ tsp of the jam into these dents.
  • Step #10 Bake for about 12 mins or until lightly golden & done.
  • Step #11 Remove from the oven & pan to cool on a wire rack.
  • Step #12 Beat together the ¼ c of peanut butter & the icing sugar.
  • Step #13 Beat in the milk a little at a time until it reaches a good consistency for piping.
  • Step #14 Place into a plastic sandwich bag & squish it all down into one corner.
  • Step #15 Snip of a tiny bit of the corner of the bag & pipe the frosting onto the cookies.
