Chipotle-chicken Soup With Avocado Recipe

Ingredients
  • 2 tbsps lime juice (lemon will work) .
  • 2 medium Spanish onions (sliced) .
  • 4 garlic cloves (minced) .
  • 1 tbsp onion powder .
  • 1 large lime (cut into wedges) .
  • 6 green onions (sliced fine) .
  • 4 whole chicken breasts .
  • 2 chipotle chiles in adobo (drained & minced fine) .
  • 1 tbsp garlic powder .
  • 2 tbsps cilantro (sliced) .
  • 1/2 tbsp salt .
  • 2 large avocados

Directions
  • Step #1 Place the chicken, Spanish onions, garlic,and the chipotle In a large-ish soup pot.
  • Step #2 Sprinkle top in the salt,and the garlic & onion powders.
  • Step #3 Put in enough water to cover over all.
  • Step #4 (about 2 quarts).
  • Step #5 Bring to a boil, reduce heat to simmer.
  • Step #6 Cook at a "fast simmer",( but not a "rolling" boil) for about 1 hr, or until chicken is thoroughly done.
  • Step #7 Remove the chicken to cool.
  • Step #8 Keep the broth over low heat/flame in the meantime.
  • Step #9 Taste the broth & adjust the seasonings as desired (more salt, etc.
  • Step #10 ).
  • Step #11 Peel, pit & chop the avocados into small chunks.
  • Step #12 Pour the lime juice over the avocado chunks & toss.
  • Step #13 When chicken is cooled enough to handle, remove ALL bones, fat & gristle.
  • Step #14 Tear all the chicken meat into bite size bits.
  • Step #15 Arrange equal amounts of the chicken meat in 4 soup bowls.
  • Step #16 Do the same over the chicken meat with the green onion, cilantro, & avocado.
  • Step #17 Ladle the hot broth into each bowl,and serve this with lime wedges.
