Chickpea Flour Choc. Chip Cookies (gluten-free) Recipe

Ingredients
  • 1/4 tsp vanilla .
  • 1/2 tsp baking powder .
  • 1/2 c butter .
  • 1/2 tsp salt .
  • 2/3 c chocolate chips (optional) .
  • sliced nuts (optional) .
  • 2 c brown sugar .
  • 2 c chickpea flour .
  • 1/2 tsp baking soda .
  • 2 eggs

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Mix butter, sugar, eggs, & vanilla.
  • Step #3 Mix chickpea flour, soda, salt, & baking powder in a separate bowl.
  • Step #4 Add dry ingredients to wet ingredients & mix thoroughly.
  • Step #5 Stir in chips & nuts.
  • Step #6 Drop by the tbsp onto a baking sheet.
  • Step #7 I use parchment paper, but if you don't, grease the baking sheet.
  • Step #8 (If your dough is very thick, push it down & spread it out a little.
  • Step #9 My dough was soft & sticky, & it melted & spread out in the oven.
  • Step #10 ).
  • Step #11 Bake at 350F for 10-15 mins.
  • Step #12 These cookies will have to be a little darker than golden brown so that they will set & hold together.
  • Step #13 Let cool on the baking sheet for a few mins before removing.
  • Step #14 Cool completely on a wire rack.
