Cherry Bell Cookies Recipe

Ingredients
  • 1/2 tsp baking soda
  • 1 tbsp butter
  • 1/3 c packed brown sugar
  • 1 1/2 c sliced walnuts
  • 1/2 tsp instant coffee granules
  • 1 tbsp cream
  • 1/4 c dark corn syrup
  • 1 tsp ground ginger
  • 60 maraschino cherries, halved
  • 1 egg, beaten
  • 3 c all-purpose flour
  • 1/2 tsp salt
  • 1 1/4 c packed brown sugar
  • 1 c butter
  • 3 tbsps cherry juice

Directions
  • Step #1 Sift together: 3 c flour, 1/2 tsp baking soda, 1/2 tsp salt, 1 tsp ginger & 1/2 tsp instant coffee.
  • Step #2 Put aside.
  • Step #3 Cream 1 c butter or margarine.
  • Step #4 Add 1 1/4 c brown sugar.
  • Step #5 Cream well.
  • Step #6 Blend in dark corn syrup, egg, & cream.
  • Step #7 Add dry ingredients & mix well.
  • Step #8 Roll out dough, 1/3 at a time on floured board to 1/8 inch thickness.
  • Step #9 Cut cookies into 2 1/2 inch rounds.
  • Step #10 Place on ungreased cookie sheet.
  • Step #11 To Make Filling: Combine 1/3 firmly packed brown sugar, 1 tbsp butter, 3 tbsps cherry juice.
  • Step #12 Stir in 1 1/2 c sliced nuts, sliced fine.
  • Step #13 Place 1/2 tsp filling in center of each round.
  • Step #14 Shape into a bell by folding sides of dough to meet over the filling using spatula to fold over sides.
  • Step #15 Make top of bell narrower than at the clapper end.
  • Step #16 Place 1/2 of a maraschino cherry (cut side down) at open end of each bell for clapper.
  • Step #17 Bake at 350 degrees F for 12-15 mins.
