Ingredients
  • 3 oz hot salami, sliced thinly .
  • 3 shallots, sliced .
  • 1/2 c parmesan cheese, grated .
  • canola oil, for shallow frying .
  • 1/4 c low-fat sour cream .
  • 2 tsps hot paprika .
  • 4 medium potatoes .
  • 1 garlic clove .
  • 1/2 c mild salsa (for serving) .
  • 1/2 c polenta .
  • 2 tbsps lemon juice .
  • 1 egg white .
  • 1/4 c mild salsa .
  • 8 oz artichoke hearts (in brine, drained) .
  • 1/4 c olive oil

Directions
  • Step #1 Boil potatoes until tender, drain, mash roughly.
  • Step #2 Stir in shallots, egg white, cheese, 1/4 c salsa, paprika & polenta - mix well.
  • Step #3 Shape potato mixture into 6 patties.
  • Step #4 Shallow fry in batches until lightly browned on both sides & heated through.
  • Step #5 Drain on paper towel if you like.
  • Step #6 Meanwhile, add the salami to a clean pan, & cook, stirring until crisp.
  • Step #7 Top potato cakes with extra salsa, artichoke puree & salam strips.
  • Step #8 *For the puree: Process artichokes, garlic, cream & juice until smooth.
  • Step #9 Add oil slowly in a thin stream with motor is running.
