Moist Vegan Cornbread Recipe

Ingredients
  • 1 c plain soy milk .
  • 1 c whole wheat flour .
  • 1/3 c canola oil .
  • 1 c fine cornmeal .
  • 1 tsp kosher salt .
  • 2/3 c maple syrup .
  • 1 tbsp baking powder

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Stir first three ingredients together.
  • Step #3 In another bowl whisk together the flour, cornmeal, baking powder & salt.
  • Step #4 Regular salt will work as well.
  • Step #5 Mix wet & dry ingredients together & pour this into a greased 9x9 square pan.
  • Step #6 Bake for 35 mins at 350 (or in miniloaf or muffin pans for about 25 mins), until tester comes out clean.
