Christmas Zucchini Bread Recipe

Ingredients

1 1/2 c coconut flakes .
1 tsp baking soda .
1 c cooking oil .
2 tsps vanilla .
3 eggs, beaten .
2 c zucchini, grated .
1 c pecans, sliced .
3 c flour .
2 c sugar .
1 tsp ground cinnamon

Directions

Step #1 Preheat oven to 350 degrees.
Step #2 Mix oil, zucchini, eggs, & vanilla.
Step #3 Add sugar, flour, soda & cinnamon, mixing well.
Step #4 Stir in coconut & pecans.
Step #5 Bake in greased loaf pans until a toothpick tests "clean" Cool 15 mins in bread pans.
Step #6 Remove from pans-I wrap mine in foil wrap & slice the loaves just before serving.
