Lebanese Navy Beans With Tomatoes And Onion Recipe

Ingredients
  • 1 c dried navy beans, soaked overnight .
  • 1 tbsp extra virgin olive oil .
  • 3 tsps cumin .
  • 6 c water .
  • salt & freshly ground black pepper .
  • 2 onions, sliced .
  • 14 1/2 oz sliced tomatoes .
  • 3 tbsps tomato paste .
  • 4 garlic cloves

Directions
  • Step #1 Drain beans.
  • Step #2 Combine beans in pot with water, cover, bring to boil.
  • Step #3 Reduce heat, simmer partially covered until tender 1 to 1.
  • Step #4 5 hrs.
  • Step #5 Skim off foam as it rises to top.
  • Step #6 Drain pot reserving liquid.
  • Step #7 In heavy bottom pot, heat oil over med-heat/flame.
  • Step #8 Add onions & garlic, saute until golden for about 10 mins.
  • Step #9 Add cumin, tomatoes, tomato paste, beans & enough of cooking liquid to cover beans.
  • Step #10 Add salt & pepper to taste.
  • Step #11 Simmer for 20 mins until beans are tender & sauce has thickened.
  • Step #12 Serve over rice or cous cous.
  • Step #13 Or, just with bread.
