Carrot Cake With Cream Cheese Frosting Recipe

Ingredients
  • 2 c all-purpose flour .
  • 1 c canola oil .
  • 1 1/2 c granulated sugar .
  • 2 c confectioners' sugar, sifted .
  • 1 lemon, zest of, finely grated .
  • 8 oz cream cheese, room temperature .
  • 1 tsp baking soda .
  • 1/4 c unsalted butter, room temperature .
  • 1 1/2 tsps ground cinnamon .
  • 1 tsp vanilla extract .
  • 2 1/2 c raw carrots, finely grated .
  • 2 tsps vanilla extract .
  • 1 1/2 tsps baking powder .
  • 4 large eggs .
  • Cream Cheese Frosting .
  • 1 c pecans or walnuts, toasted & coarsely sliced .
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 350°F & place rack in center of oven.
  • Step #2 Spray two 9x2-inch cake pans & line the bottoms of the pans with a circle of parchment paper.
  • Step #3 Toast the pecans or walnuts for about 8 mins or until lightly browned & fragrant.
  • Step #4 Let cool & then chop coarsely.
  • Step #5 Peel & finely grate the carrots.
  • Step #6 Set aside.
  • Step #7 In a separate bowl whisk together the flour, baking powder, baking soda, salt & ground cinnamon; set aside.
  • Step #8 In bowl of electric mixer, with the paddle attachment, beat the eggs until frothy.
  • Step #9 Gradually add the sugar & beat until the batter is thick & light colored.
  • Step #10 Add the oil in a steady stream & then beat in the vanilla extract.
  • Step #11 Add the flour mixture & beat just until incorporated.
  • Step #12 With a large spatula fold in the grated carrots & sliced nuts.
  • Step #13 Evenly divide the batter between the two prepared pans & bake 25 to 30 mins.
  • Step #14 Remove from oven & let cool on a wire rack.
  • Step #15 After about 5-10 mins invert the cakes onto the wire rack, remove the pans & parchment paper, & then cool completely before frosting.
  • Step #16 To assemble: place one cake, top side down, onto your serving plate.
  • Step #17 Spread with about a third of the frosting.
  • Step #18 Gently place the other cake, onto the frosting, top of cake facing up, & spread the rest of the frosting over the top of the cake.
