Heart-healthy Baked Cod Fillets Recipe

Ingredients
  • 7 (8 oz) cod fish fillets, frozen .
  • 6 egg whites .
  • 1/2 c nonfat milk .
  • 1/2 c white flour .
  • 2 tbsps canola oil .
  • 10 oz fish-fry mix (like Tony Chachere's Crispy Creole Fish Fry Mix)

Directions
  • Step #1 Partially thaw cod fillets in refrigerator.
  • Step #2 Fish is ready to be prepared when it is just beginning to soften.
  • Step #3 (Times will vary.
  • Step #4 ).
  • Step #5 Preheat oven to 475 degrees F.
  • Step #6 Place oven rack at second-lowest setting.
  • Step #7 Line baking sheet with Reynolds Release Foil & brush foil wrap lightly with canola oil (to prevent sticking & crisp fish).
  • Step #8 Rinse fish under cold water.
  • Step #9 With a very sharp knife, slice each fillet horizontally.
  • Step #10 In a shallow bowl, mix egg whites & milk.
  • Step #11 In a gallon-sized Ziploc bag, mix fish fry mix & flour.
  • Step #12 Place one fillet into Ziploc bag, close tightly, & shake carefully to coat; coat well.
  • Step #13 Reach into bag & pick up fillet.
  • Step #14 While still inside bag, shake fillet carefully to remove any excess.
  • Step #15 Place fillet into egg mixture, coating well.
  • Step #16 Remove from egg mixture, shaking carefully to remove any excess.
  • Step #17 Return fillet to Ziploc bag; seal tightly.
  • Step #18 Shake bag again to coat; coat well.
  • Step #19 Remove fillet from bag, making sure to remove any excess.
  • Step #20 Place onto baking sheet.
  • Step #21 Repeat for each fillet.
  • Step #22 Bake fillets for 6 mins; turn over carefully.
  • Step #23 Bake another 6 mins & remove this from oven.
  • Step #24 Serve alone, on a good bun, or in your favorite wrap with lots of fresh veggies & low-fat condiments.
  • Step #25 (My kids absolutely devoured these in lettuce wraps!).
