Grilled Halibut With Thyme Recipe

Ingredients
  • 1/3 c olive oil .
  • 1/3 c chicken broth .
  • 2 garlic cloves, minced .
  • 1/4 tsp lemon-pepper seasoning .
  • 3 scallions, sliced .
  • 4 (6 oz) halibut steaks .
  • 1 tsp dried thyme

Directions
  • Step #1 Place fish in a shallow dish.
  • Step #2 In a small mixing bowl, mix the rest of the ingredients & mix well.
  • Step #3 Pour the mixture over the fish & marinate about 30 mins at about room temp, or put in the fridge, covered, 1-2 hrs.
  • Step #4 Remove fish from the marinade, reserving marinade.
  • Step #5 Put marinade in a saucepan & heat to boiling.
  • Step #6 Reduce heat & let simmer until needed.
  • Step #7 Place fish on a gas grill over med-heat/flame or on charcoal grill for 4-6 inches from medium coals.
  • Step #8 Cook, turning once & basting with heated marinade, 8-12 mins or until fish flakes easily when tested with a fork.
  • Step #9 Serve as soon as possible & discard remaining marinade.
