Thai Beef Salad Recipe

Ingredients
  • 25 g coriander leaves .
  • 1 1/2 tbsps coriander, roots & stems finely sliced .
  • 1 1/2 garlic cloves, crushed .
  • 3 tbsps fish sauce .
  • 200 g salad leaves, mixed .
  • 3 (200 g) beef eye steak fillets .
  • 1 cucumber, halved lengthways & thinly sliced on the diagonal .
  • 10 g mint leaves, torn .
  • 3 tsps brown sugar .
  • 120 ml lime juice .
  • 375 g cherry tomatoes, halved .
  • 3/4 red onion, cut into thin wedges .
  • 1 1/2 stalks lemongrass, finely sliced (white part only) .
  • 3 small red chilies, finely sliced

Directions
  • Step #1 Mix together lime juice, sliced coriander, fish sauce, sugar, garlic, lemon grass & chilli until sugar has dissolved.
  • Step #2 Chargrill steaks for 4 mins each side or until medium.
  • Step #3 Let steaks cool, then slice thinly across grain.
  • Step #4 Put salad leaves, mint, add beef & dressing, tomoatoes & cucumber in large bowl, coriander leaves, onoin, toss together & serve as soon as possible.
