1 cucumber, halved lengthways & thinly sliced on the diagonal .
10 g mint leaves, torn .
3 tsps brown sugar .
120 ml lime juice .
375 g cherry tomatoes, halved .
3/4 red onion, cut into thin wedges .
1 1/2 stalks lemongrass, finely sliced (white part only) .
3 small red chilies, finely sliced
Directions
Step #1 Mix together lime juice, sliced coriander, fish sauce, sugar, garlic, lemon grass & chilli until sugar has dissolved.
Step #2 Chargrill steaks for 4 mins each side or until medium.
Step #3 Let steaks cool, then slice thinly across grain.
Step #4 Put salad leaves, mint, add beef & dressing, tomoatoes & cucumber in large bowl, coriander leaves, onoin, toss together & serve as soon as possible.
