Chocolate Mint Cheesecake Recipe

Ingredients
  • 3 tbsps white sugar
  • 4 eggs
  • 1 3/4 c white sugar
  • 1 tbsp butter
  • 1 (9 oz) package thin chocolate wafers
  • 1/2 c heavy whipping cream
  • 1/2 c unsweetened cocoa powder
  • 3 (1 oz) squares bittersweet chocolate
  • 12 (1 oz) squares bittersweet chocolate
  • 1 tsp peppermint extract
  • 7 tbsps butter
  • 6 (1 oz) squares bittersweet chocolate
  • 1 tbsp vanilla extract
  • 1 1/2 c sour cream
  • 1/2 c heavy whipping cream
  • 1/4 c white sugar
  • 4 (8 oz) packages cream cheese

Directions
  • Step #1 Grind the chocolate wafers & 3 oz of chocolate in a food processor/blender; the crumbs should be small.
  • Step #2 Mix in 3 tbsps of sugar.
  • Step #3 Melt 7 tbsps of butter or margarine, & add it to the chocolate crumbs.
  • Step #4 Press into the bottom of a 9 inch springform pan.
  • Step #5 Melt 12 oz of chocolate, & cool slightly.
  • Step #6 Blend in cream cheese, 1 3/4 c sugar, vanilla, eggs, 1/2 c cream, cocoa, & peppermint extract.
  • Step #7 Pour this in crust.
  • Step #8 Bake for one hr at 350 degrees F (175 degrees C).
  • Step #9 Cool overnight.
  • Step #10 In a small bowl, mix together the sour cream & 1/4 c sugar.
  • Step #11 Pour on top of cooled cheesecake.
  • Step #12 Bake for 20 mins at 350 degrees F ( 175 degrees C).
  • Step #13 Chill for 6 to 8 hrs.
  • Step #14 To decorate the cheesecake make a chocolate icing.
  • Step #15 In a small saucepan, simmer 1/2 c cream & 1 tbsp butter.
  • Step #16 Add to this 6 oz of chocolate, & stir until melted.
  • Step #17 Remove from heat.
  • Step #18 Freeze until the mixture is piping consistency (stir every once in awhile).
  • Step #19 Using a pastry bag, pipe a lattice on the top.
