Fried Whitebait Recipe

Ingredients
  • salt .

  • lemon wedges, to serve .
  • 1 lb whitebait, defrosted if frozen .
  • milk .
  • oil (for deep frying) .
  • 1-2 oz plain flour, seasoned with .
  • cayenne pepper

Directions
  • Step #1 Heat oil to 180 degrees C or 375 degrees F.
  • Step #2 Remove any broken or bruised whitebait.
  • Step #3 Carefully wash & dry the remaining fish.
  • Step #4 Coat fish in milk & then put fish into a bag with the seasoned flour.
  • Step #5 Shake to coat.
  • Step #6 This can be done in batches; while some fish is cooking, the next batch is prepared.
  • Step #7 Cook fish for 1 min before removing from the oil with a slotted spoon.
  • Step #8 Drain on paper towels & sprinkle with a small amount of salt before serving.
