Ingredients

1 lb whitebait, defrosted if frozen .
milk .
oil (for deep frying) .
1-2 oz plain flour, seasoned with .
cayenne pepper
Directions
Step #1 Heat oil to 180 degrees C or 375 degrees F.
Step #2 Remove any broken or bruised whitebait.
Step #3 Carefully wash & dry the remaining fish.
Step #4 Coat fish in milk & then put fish into a bag with the seasoned flour.
Step #5 Shake to coat.
Step #6 This can be done in batches; while some fish is cooking, the next batch is prepared.
Step #7 Cook fish for 1 min before removing from the oil with a slotted spoon.
Step #8 Drain on paper towels & sprinkle with a small amount of salt before serving.
