Creamy Basil And Sun-dried Tomato Vegan Pasta Recipe

Ingredients
  • 1 (300 g) package firm silken tofu .
  • 2 c broccoli, cut into bite-sized pieces .
  • 3 garlic cloves .
  • 1/2 tsp salt .
  • 1/4 c fresh basil, tightly packed .
  • 8 sun-dried tomatoes .
  • 8 oz whole wheat pasta, dry

Directions
  • Step #1 Cook pasta.
  • Step #2 While pasta is cooking, garlic, tofu, basil, mix tomatoes, & salt in a food processor/blender or mixer until smooth.
  • Step #3 Set aside.
  • Step #4 When pasta is almost done, add broccoli to pasta water & cook for an extra 3 mins.
  • Step #5 Drain & return pasta/broccoli to pot.
  • Step #6 Add sauce & toss well.
  • Step #7 Serve as soon as possible.
