Michael's At The Citadel Raspberry Quiche Recipe

Ingredients
  • 3/4 c butter, cold sliced .
  • 1 1/3 c cocoa .
  • 1/4 c cream .
  • 1 pint raspberries .
  • 3 tbsps butter .
  • 1 tsp salt .
  • 1 1/2 c cream, plus .
  • 2 egg yolks .
  • 1 1/2 c all-purpose flour, sifted (for the chocolate crust) .
  • 2 1/4 c white chocolate, sliced .
  • 2 tbsps sugar .
  • 2 tbsps cream (for the filling) .
  • 3 tbsps cherry brandy (the original calls for kirshwasser)

Directions
  • Step #1 For the crust: Mix flour, cocoa, sugar & salt.
  • Step #2 Add butter & mix until mixture forms crumbs about the size of peas.
  • Step #3 Add yolks & cream & stir just until incorporated.
  • Step #4 Do not overmix.
  • Step #5 Chill the dough.
  • Step #6 Roll dough to 1/4-inch thickness & place this into a tart shell.
  • Step #7 Chill again.
  • Step #8 Place plastic wrap directly on top of crust & fill with dry beans for weight.
  • Step #9 Bake at 375°F for 12 mins.
  • Step #10 Remove beans & plastic wrap.
  • Step #11 Bake again until dough is dry, but not burnt.
  • Step #12 Fill the tart with raspberries.
  • Step #13 For the quiche: Boil the cream with the butter.
  • Step #14 Pour mixture over the white chocolate; mix until smooth.
  • Step #15 Add the kirshwasser.
  • Step #16 Pour mixture over raspberries in the tart.
  • Step #17 Let set until firm.
