Ingredients
1 tsp fresh chives, sliced .
1/4 tsp black pepper .
250 g salmon (fresh cutlet or steak) .
1 tsp water .
2 tbsps sour cream .
5 saffron strands .
1/2 tsp lime juice .
200 ml water .
1/2 tsp olive oil
Directions
Step #1 Evenly spread saffron threads at the bottom of a small glass & top this with 1 tsp of water.
Step #2 Place into a microwave oven towards the edge of the carousel with 200ml of water In a large-ish glass at the opposite edge.
Step #3 Microwave on high for 3 mins.
Step #4 WARNING - the water may be superheated - allow to rest 5 mins before touching either glass.
Step #5 Remove the small glass & transfer the saffron / remaining liquid to a small mixing bowl (or for a single serve just leave in the glass).
Step #6 Mix through sour cream, lime juice & sliced chives mixing well & place this in refrigerator while salmon cooks.
Step #7 Rub olive oil over the salmon & sprinkle with pepper.
Step #8 Cooking using your preferred techique, I grilled them on a BBQ plate over med-heat/flame for about 7 mins a side.
Step #9 Spread (it is quite thick) mixture over the salmon & serve this with your favourite salads & side-dishes.
