Raisin Apricot Bars Recipe

Ingredients
  • 3/4 c unsalted butter, softened .
  • 1/2 tsp baking powder .
  • 1/4 tsp pumpkin pie spice .
  • 1/2 c granulated sugar .
  • 1 1/4 c dried apricots, quartered .
  • 1 1/2 c rolled oats .
  • 2 tbsps lemon juice .
  • 3/4 c water .
  • 1/2 tsp salt .
  • 1 c brown sugar, packed .
  • 1 1/3 c dark raisins .
  • 1 1/2 c all-purpose flour .
  • 2 tbsps cornstarch

Directions
  • Step #1 In a saucepan, & cook over med-heat/flame, water, raisins, lemon juice, mix apricots, stirring constantly, cornstarch & pumpkin pie spice, sugar, until mixture boils & thickens.
  • Step #2 Remove from heat & cool.
  • Step #3 Preheat oven to 375 degrees F, & grease a 13"x9" baking dish.
  • Step #4 In a large mixer bowl, cream butter & brown sugar.
  • Step #5 Add flour, salt & rolled oats, baking powder, & mix well.
  • Step #6 Pat half of this mixture into bottom of prepared baking dish, then spread cooled fruit mixture over that.
  • Step #7 Sprinkle top remaining flour mixture evenly over the fruit & lightly press it down.
  • Step #8 Bake 22-25 mins, or until firm in the center & topping is crisp.
  • Step #9 Cool completely before cutting into 2" squares.
